“Rihaakuru” is one of the traditional dishes of the Maldives

Locals in the Maldives enjoy rihaakuru with rice and roshi, the Maldivian flatbread. Huni roshi, a thicker version of the flatbread made with grated coconut, is a particular breakfast favorite served with rihaakuru. When served for breakfast this way, the rihaakuru is usually fried with onions, green mangoes, chilies, curry leaves, and pandan to make the lull rihaakuru, which literally means fried rihaakuru.

Rihaakuru is mixed with coconut milk, onions, lime, chilies, and curry leaves to prepare a lunchtime favorite with rice called rihaakuru dhiya. A cooked version called rihaakuru “garudhiya” or “kekki rihaakuru dhiya” skips the coconut milk.

Note: Rihaaru contains a high level of histamine. When consumed for the first time, it may be quite salty or oily. It is recommended that you consume it in small quantities.
